What's it like to be a Chef de Partie ?
A Chef de Partie works in a kitchen and reports to the Sous Chef and Head Chef. They’re usually in charge of a particular station or area, but are also expected to provide assistance in other areas of a kitchen. A Chef de Partie needs strong multitasking skills as they encounter many tasks that require quick thinking and prioritising. In large kitchens, a Chef de Partie can have several assistants.
Tasks and duties
- Preparing specific food items and components at your station.
- Following the instructions given by the head chef and sous chef.
- Checking stock and ordering supplies for your station.
- Supervising the junior chefs or commis.
- Estimating daily production necessities.
- Checking the quality of dishes ready to be served to ensure standards are met.
- Following correct preservation standards and proper handling of food.
- Frequently checking the expiration dates of food items.
- Consulting with the head chef and sous chef about any last-minute changes or events.
How to become a Chef de Partie
Kitchen experience is required to become a Chef de Partie. Completing a bachelor or associate degree may fast track your journey and better prepare you for the role.
- In addition to getting work experience in a kitchen, you might consider completing a bachelor or associate degree. You can study Hotel Management, Culinary Arts, Commercial Cookery, or equivalent.
- Continue to develop your skills in the kitchen; by doing so you can get promoted to Demi Chef de Partie from being a Kitchen Hand or a Commis Chef. You can also learn directly from a Chef through an apprenticeship program and work your way up to become a Chef de Partie.
