What's it like to be a Chef?
Chefs do more than just cook. They also perform a range of pre-service tasks, such as preparing food and selecting ingredients, as well as post-service tasks such as monitoring inventory. They oversee the kitchen’s workflow and coordinate with the staff to ensure that food preparation is on schedule. The kitchen can be a very busy workplace, and it is the chef’s responsibility to take on the leadership role.
Tasks and duties
- Overseeing preparation work such as chopping vegetables and cutting meat.
- Selecting ingredients that will give the best flavours.
- Crafting unique dishes.
- Keeping up with the current trends in food.
- Training apprentices through hands-on work.
- Making sure all dishes are cooked correctly and presented appealingly.
- Maintaining good hygiene and cleanliness in the workplace and making sure kitchen staff are abiding by protocols.
- Communicating with the kitchen and floor staff to ensure coordination.
- Monitoring the conditions and cleanliness of equipment and tools.
- Keeping track of stock and inventory.
How to become a Chef
While it is possible to work your way up to becoming a Chef without a qualification, employers often seek chefs who have a diploma in culinary arts.
- Complete a secondary school certificate or the SPM (Sijil Pelajaran Malaysia) and pursue a pre-university program. Some culinary arts programmes may require you to take an English test such as Malaysian University English Test (MUET) or International English Language Testing System (IELTS).
- Study Culinary Arts or a related course. There are numerous culinary courses available, such as pastry and baking and culinary management. Universities may require culinary students to undergo internship or industrial training.
- Gain experience as a Commis Chef or a Chef de Partie. You can also work your way up to become a head chef by gaining experience in a kitchen environment.
- Experienced Chefs may choose to start their own business such as a restaurant, food truck or catering company. Additional business training may help if you are planning to run your own business in the future.
